Strawberry Avocado Salsa
I made this recipe the other night and served it with baked pork chops, and it was amazing! I love how it's fresh and healthy, but packed with so much flavor. The next day I ate the leftovers over my salad, which was also amazing and I didn't even need salad dressing. Of course this salsa is also perfect with tortilla chips! Note: I made mine non-spicy because Kyle and I don't really like things spicy. Click on link to original if you like spicy!
1 1/4 cup finely chopped strawberries
1/2 cup finely chopped peeled avocado (make sure it's not too ripe and still slightly firm)
2 tablespoons finely chopped yellow onion
1 tablespoon finely chopped fresh cilantro
zest from 1 lime
Fresh lime juice from 1 lime
Combine all ingredients in a bowl, and toss gently. Serve immediately.
